What they are doing is amazing, so this is not meant to take anything away from them. My guess is they are at up to 6%organic material. Which is amazingly good. To get to 6% organic matter (humus) from a 1.7 starting point would require about 700,000 lbs of organic material added to every acre over the years, which I deduce it’s been an 11 year endeavor. That’s 32 tons per year.

You can have healthy soil without animals but you have to have humans to “do the cow’s work” of cutting down cover crop, composting it, incorporating the compost... Livestock are just a cheat code! And the animals are happier and healthier than if they were in a CAFO so it’s really a no brainer.
